I’m not a huge fan of cooking, but I am a huge fan of eating! However, because I really care about my health, I am forever looking for whole, vegan recipes that don’t use oil, margarine, or other added fats that aren’t whole foods by themselves. Do you have any original, great recipes that fit these criteria? If so, let me know so I can post them!
Here is my absolute favorite recipe, taken from my book, Vegan in 30 Days. Even non-vegans beg for the recipe and claim it’s a hit at home! I like it best cold, but if you want it warm for the winter, just heat it up (and add the avocado and cilantro afterward.)
incredible Veggie Ceviche
Ingredients:
½ Red Onion, diced
3 Tomatoes, diced
1 Red Pepper, diced
1 Green Pepper, diced
1 C Corn
2 Cans Black Beans (or pinto, or a mix)
1 Avocado, diced
8 Sprigs Cilantro, diced
3 T Red Wine Vinegar
Dash of Cayenne Pepper or Chipotle Powder
Juice of one Lemon
Dash of Tabasco Sauce
Prepare:
Mix first 8 ingredients in a big bowl. Mix last 4 ingredients in a cup. Combine and serve!
Thanks for the recipe! Looks yummy.
ReplyDeleteI wanted to let you know that you will be featured in my blog during the month of May - http://nowthatsanimprovement.blogspot.com - when I go vegan for a month. Wish me luck!!
I am making this delicious looking dish tonight! I am supposed to be in Tacoma previewing homes for a client in 20 minutes, but I can't stop reading on and on in the blogs....stop me!
ReplyDeleteSarah, you may be a great addition to your company, but this encouragement, advice, etc is your calling.
Thank you - that is very kind! I hope to make it my full-time calling one day soon!

Dear Sarah, hugs from Poland, Europe! I left your book at home and on my way to see my folks for Easter I came up with an idea of makin' them your fantastic ceviche (happy to find the recipe on the web!). All of your recipes are absolutely great, but there are so few in your book... Ever thought of writing a vegan cookbook? I know there are many already, but your recipes are sooo good and I would surely trust your taste! M
